4. Black Bean and Vegetable Enchiladas

blackbeanveggie-recipe-2013-07-16Need to feed a lot of people? Enchiladas are a great option, and will take your meal beyond the standard summer fare. Fresh corn kernels pair well with black beans, onion, pepper, and mushrooms to fill corn tortillas that are drenched in enchilada sauce.

Want more veggies? Summer squash and tomatoes would make a fantastic addition. Cover the whole thing with a reduced-fat cheese, or leave off the cheese and serve with avocado for a nice addition of healthy fats. Find the complete recipe for black bean and veggie enchiladas here.

5. Honey-Chipotle Grilled Corn

chipotle-corn-recipe-2013-07-16Corn on the cob is delicious as-is, to be sure, but it never hurts to add more great flavors! Mix up a glaze of a lightly flavored honey, chipotle peppers, garlic, salt, and olive oil (this recipe calls for butter, but switching to a healthy fat is always a good idea).

Meanwhile, fire up your grill and roast a few ears of corn with the husks still on. After 15 minutes, carefully remove the husks, brush the glaze over the kernels, and return the corn to the grill for a few more minutes. Enjoy! Find the full recipe here.
