4. Black Bean and Vegetable Enchiladas
Need to feed a lot of people? Enchiladas are a great option, and will take your meal beyond the standard summer fare. Fresh corn kernels pair well with black beans, onion, pepper, and mushrooms to fill corn tortillas that are drenched in enchilada sauce.

5. Honey-Chipotle Grilled Corn
Corn on the cob is delicious as-is, to be sure, but it never hurts to add more great flavors! Mix up a glaze of a lightly flavored honey, chipotle peppers, garlic, salt, and olive oil (this recipe calls for butter, but switching to a healthy fat is always a good idea).
