Are you fed up with your regular breakfast routine of cereal, oatmeal or omelettes? Try changing things up with a fun breakfast that even your kids will love. Cut up bell peppers sideways, taking out the middle white parts, and sauté them in a pan with a little oil. After a few minutes of sautéing, crack an egg into the insides of each of the bell pepper ‘flowers’ so the egg is in the center.

As the eggs cook you will notice the concoction looks like a flower with the yellow yolk in the middle of the ‘flower’. You get iron from the eggs and from the peppers you get vitamin C (as long as you don’t cook them too much or on too high a heat). Vitamin C helps to absorb iron so the two foods compliment each other well.
