4. Chicken with Blueberry Basil Salsa
Coarsely blended blueberries meet grilled jalapenos, scallions, red onion, basil, and cilantro in this fruity variation of the usual summery salsa.
Add in some lime juice, salt, pepper, and whole blueberries to finish it off, and use the mixture to top off grilled chicken cutlets. Or, if you just love that blueberry basil salsa, use it as a dip for your favorite chips and veggies, or serve it alongside tacos!
5. Salmon with Blueberry Pan Sauce
For a quick blueberry sauce, sauté shallots, thyme, allspice, and blueberries with a little balsamic vinegar and kosher salt, and then coarsely mash up the berries with a fork or wooden spoon.
You could use it to top just about anything that would go well with a sweet and tangy sauce, but this recipe suggests topping grilled salmon with the blueberry pan sauce.
6. Blueberry-Lime Granita
If you’ve never had granita, it’s a little bit like a grown-up version of a snow cone, or an Italian ice. First, puree fresh blueberries with the sweetener of your choice, lime juice, and lime zest, and stir in a fizzy liquid like seltzer or lime soda.
Freeze the mixture until solid, and then throw it all in the food processor. You’ll wind up with a light, almost grated ice consistency that’s incredibly refreshing and just sweet enough to satisfy that dessert craving. Check out this recipe for more details.
When you’re not eating blueberries straight from the carton, what’s your favorite way to enjoy them?
