One of the most classic ways to cook an artichoke involves steaming the whole ‘choke, pulling off the leaves, and eating the fleshy part, dipped in hot butter. Extraordinarily tasty, but kind of high in fat. This version adds olive oil, lemon, and garlic to the artichokes while they’re steaming, imbuing them with flavor so that they don’t need to be dipped in anything.

5. Tomato and Feta Stuffed Artichoke
Stuffed artichokes take some prep time, but if you want to make a meal with love, this is where to start. First, combine whole wheat bread crumbs, crumbled feta cheese, finely chopped sun-dried tomatoes, chopped fresh basil, garlic, salt, pepper, and olive oil.
