2. Grilled Chicken and Corn Salad
This salad features everyone’s summer favorite – corn on the cob – but in a more grown-up setting. Grilled chicken and corn, seasoned with rosemary, lemon, garlic, and olive oil, dress up a bed of baby spinach.
Chunks of avocado and shaved Parmesan cheese add satiating, healthy fats and a little extra flavor. The whole thing is drizzled with the mix of seasoning and olive oil that lent the grilled chicken and corn their flavor. Learn how to make this great summer salad here.
3. Chilled Corn Soup
If soup in the summer disconcerts you, remember that this one is chilled – and super refreshing. It’s also a perfect use for leftover corn on the cob! Shuck the kernels off of your corn, and blend them with fresh basil and olive oil.
Strain the mixture to remove any leftover fibers and to thin it out, and voila! Sprinkle with salt and drizzle with some basil-infused olive oil for a super-summery taste. Learn how to make the whole thing here.
