Dark, leafy greens are amongst one the most nutrient-packed vegetables on Earth.
Most people have a hard time getting enough greens in their diet. This is either because:
- They don’t know how to cook leafy veggies
or - They simply don’t like how they taste
The following recipes will give a boost of flavour to your greens. Best of all, they’re easy and can be done in under 10 minutes.
1. Easy Greens Recipe
This recipe is a quick and easy way to get some greens on your plate. Enjoy as a side dish to your favourite meal.
Ingredients:
- 1 bunch dark leafy greens e.g. spinach, kale
- 1 Tablespoon olive oil
- Chilli powder, sea salt, garlic powder
Instructions:
- Wash and dry the greens.
- Cut greens into bite-size pieces
- Sauté until bright green
- Add seasonings until satisfied.
- Serve & Enjoy!
2. Chipotle Kale Chips
Kale chips are a healthier alternative to corn chips. Enjoy as a crunchy and filling snack.
Ingredients:
- 1 cup chopped kale leaves (stemmed)
- 1 teaspoon olive oil
- 1/4 teaspoon kosher salt
- 1/4 teaspoon chipotle chilli powder
Instructions:
- Preheat oven to 425°.
- Toss kale with olive oil and seasonings.
- Spread kale evenly on baking sheet.
- Bake until brown (between 5-8 minutes).
- Serve & Enjoy!
3. Creamy Coconut Chard
This vegan recipe can easily be spiced up with some curry paste or turned into a smooth béchamel.
Ingredients:
- 1 bunch swiss chard
- 1/3 can coconut milk
- 1 Tablespoon coconut oil
- 1/2 lemon
- salt to taste
Instructions:
- Melt coconut oil in a large pan over medium heat.
- Rinse chard well and chop with stalk included.
- Add chard to the pan and cover it up.
- Let it cook for about 3-5 minutes, stirring occasionally.
- Add coconut milk, lemon and salt and stir.
- Let cook for a couple more minutes and serve.
4. Thai Peanut Spinach
This comforting and spicy dish will heat you up from the inside out!
Ingredients:
- 1 Tablespoon coconut oil
- 1-3 Tablespoon Sriracha
- 2 Tablespoon peanut butter
- 10 cups spinach leaves
- 1/2 a lime
- ¼ c crushed roasted peanuts
- fresh cilantro and lime wedges to serve
Instructions:
- Heat the oil in a large pot over low heat.
- Add the Sriracha and peanut butter.
- Turn up the heat to medium low and combine ingredients.
- Turn up heat to medium and add spinach.
- Add lime juice and peanuts.
- Cook until spinach is wilted, stirring often.
- Serve with cilantro and lime wedges.
- Serve as a side dish or over rice.
5. Chard Fruits And Nut Warm Salad
This salad makes a yummy light meal or a delicious appetizer.
Ingredients:
- 1 bunch Swiss chard
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 Hungarian pepper, thinly sliced
- 1/4 cup sliced almonds
- 3 tablespoons golden raisins
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
Instructions:
- Clean chard and remove stems (keep them aside).
- Cut leaves roughly 1-inch wide, 2 inches long.
- Heat oil in a large pan over medium heat.
- Once hot, add garlic, pepper, almonds and chard stems.
- Cook 3 minutes and stir often.
- Add raisins, salt, black pepper, lemon juice and leaves.
- Cook 2 to 3 minutes and keep stirring.
