4. Curried Broccoli Couscous
Want to spice up your broccoli? No problem. This curried broccoli couscous recipe is definitely big on flavor. Better yet, it’s incredibly simple.
All you need is broccoli, curry powder, couscous, olive oil, salt, golden raisins, and a can of chickpeas (feel free to ramp up the heat with hot peppers or your favorite hot sauce). With a prep and cooking time of just about ten minutes, this curried broccoli couscous makes a great side dish or a main meal.
5. Baked Fish Pouches with Broccoli and Squash
This neat little baked fish and broccoli recipe cuts down on clean up for sure. Tuck a filet of your favorite fish into a foil or parchment paper pouch with chopped broccoli, your favorite variety of squash, your favorite fresh herbs (try rosemary, basil, oregano, or thyme), some olive oil, chopped garlic and shallot, a spritz of lemon juice, salt, and pepper. Fold up the pouch, bake about 20 minutes (or until your fish is cooked through), and serve right out of the pouch. All of the flavor and moisture will be locked in, and you’ll have no dishes to wash!
