4. Walnut-Stuffed Mushrooms
These are a great little vegetarian appetizer, sure to please at your next party, or you can serve them with salad or grains for a full meal.
Large button mushrooms are stuffed with a mixture of chopped walnuts and lentils, spiced with garlic, sage, and parsley. Then, the stuffed ‘shrooms are simmered in vegetable broth and served drizzled with the thickened “sauce.” Check out this recipe for further instructions.
5. Walnut-Crusted Chicken
If you normally bread your chicken cutlets, prepare for the next level. This recipe adds finely crumbled walnuts and parmesan to a traditional homemade, whole wheat breadcrumb.
Using egg white to coat the chicken and make the breading stick cuts out unnecessary fat, and baking cuts down on the amount of oil needed. Serve these crispy walnut-crusted cutlets with a dash of lemon juice and the side dish of your choice!
6. Apple-Walnut Bread Pudding
Dessert doesn’t have to inspire guilt. This light version of apple-walnut bread pudding features everything that you’d imagine for an apple-based dessert: a touch of sweet, a tang of tart, the homey spiciness of cinnamon and nutmeg.
But this time, it’s made with egg whites, evaporated skim milk, agave syrup, and whole wheat bread, and topped with nonfat yogurt. So go on, have another bite.
