6 Seasonal Recipes: Late Spring

There’s nothing fresher than in-season food. While the exact time frame of what’s freshest when might vary somewhat in your specific region, these recipes all feature fruits and veggies that should be coming into season right about now. For the real deal of produce so in season it just popped out of the ground, take a trip to your local farmer’s market and see what’s gracing the tables.

1. Carrot-Mango Lassi

This traditional Indian drink is a great way to start off the day with a powerful punch of fruits and veggies. First juice your carrots.


Then, blend up the juice with fresh mango, nonfat yogurt, honey, a pinch of turmeric, and a little sprinkle of salt. Drink on its own as a breakfast smoothie, or enjoy as a complement to another dish. Find the recipe here.

2. Roasted Rhubarb Salad

If you’ve never had rhubarb outside of strawberry-rhubarb jam, it’s time to think outside the jar.

3. Couscous with Asparagus

This recipe for couscous with green and white asparagus is extremely simple, and really lets the flavors of the super seasonal asparagus shine through.

All you’ll need to do is cook up your couscous in chicken or vegetable broth, and add in the sliced asparagus in the last few minutes to steam. Season with salt, pepper, and olive oil, and mix in some raw arugula before servings for some extra green bite.
