The recipe for miso kale salad with tofu can be made with any variety of kale, including dinosaur kale, curly kale, or red kale. Make sure you remove the stems and slice the pieces thinly. Toss the kale with olive oil, miso, garlic and lemon juice. The kale absorbs the dressing beautifully. Top the kale with the tofu and a little bit of grated Parmesan cheese.
