5. Spinach Strawberry Quinoa Salad
This salad provides a healthy combination of baby spinach, ripe strawberries, and protein-packed quinoa and feta cheese. While your quinoa is cooking, toast up your walnuts (full of omega-3s, by the way).
Then, once the quinoa is done, toss it with the spinach leaves, sliced strawberries, half of your feta, and half of your walnuts. Use the rest of the feta and walnuts as a topping, along with a drizzle of olive oil, a squeeze of lemon juice, and kosher salt and pepper to taste. Perfect for a hot summer night!
