Spring is the best time of year for leafy greens like kale. Ranked as one of the healthiest vegetables that you can eat, kale is bursting with vitamins A, C, and K, as well as calcium, magnesium, iron, fiber, and tons of phytonutrients.

1. Two Bean and Kale Soup

Even though the weather’s getting warmer, there may still be a few chilly nights that will have you craving a healthy and hearty soup. This recipe for two-bean and kale soup features cannellini beans and black beans, kale, and a mess of other veggies and homey flavors like rosemary. Serve as a starter, or as a stick to your ribs meal all on its own.

Get the most out of your salad by substituting de-stalked kale for romaine (if you find the kale too tough, roll it up and slice thinly in a chiffonade cut before mixing it into the salad, or use baby kale). 3. Quinoa Salad With Kale and Cranberries

Grain-based salads are a great way to make a light meal or side dish more filling, and quinoa is a perfect choice for packing in those nutrients.

This recipe for a quinoa-based salad gets a flavor boost from dried cranberries and mint, a proteiny crunch from slivered almonds, and a nutritional punch from kale (and a bunch of other veggies). It’s all topped off with a lemon and olive oil vinaigrette.
