4. Chickpea, Lemon, Feta Salad
This chickpea-based salad is a delightfully light alternative to the potato and pasta salads that are standard picnic or barbecue fare. Super quick to assemble, the recipe calls for chickpeas (use canned, or soak beforehand if you start with dried), feta cheese, cherry tomatoes, lemon juice, oregano, olive oil, salt, and pepper.
